I have been told that there was no census in Ireland before 1821. What would be the best way to track relatives after that point? I'm just hitting that time period on my father's side and I'm worried that I won't be able to find earlier individuals.

Hm, sounds like you will need to look into parish records for the areas in which relatives lived. I suggest reading the research guidance for Ireland at the LDS site:

From what I understand, if you are that far back in research in Ireland, baptisms, marriages, and deaths would all be kept by the churches.

I have a 4g-great grandfather born in Dublin in 1810, and I know I need to figure out what to do next! Do I look into EVERY church to see which ones were around in 1810? Or what? It is something I must learn about as well.

The problem with Ireland is that the loss of the 19th century census returns in the blowing up of the Four Courts building in Dublin during the Civil War of 1922 however I will try and track down what other documentation might be helpful but Irish records are patchy and prefamine times it is very difficult to track down information but I will see what I can do its almost midnight here and I am a little bit dopey
